Soba noodles are made of buckwheat flour , which gives it a dark brownish-gray color. They are roughly as thick as spaghetti and prepared in various hot and cold dishes. Buckwheat is a grain that has been consumed for hundreds of years in the northwest parts of China. It has a nutty, earthy flavor. Because buckwheat is rich in nutrients, such as fibrin,amino acid, and microelement, especially protein, it has the functions of maintaining the capillary vessel's smooth,and preventing and curing obesity.

Tips: How to make Soba Noodle Salad
Cook soba noodles in a large pan of boiling water about 5 minutes. Drain and rinse with coldwater. Combine noodles, scallions and parsley in a bowl. Combine next 4 ingredients in a separate bowl. Then mix in miso, working out the lumps with the back of a spoon. Thin if necessary with a little water, drop by drop. Combine with noodle mixture and chill. Garnish with sesame seeds.
